The ingredients needed to make Fruit Loaf:
  1. Take 12 oz Dried fruit (mixed fruit or any dried fruit & citrus peel)
  2. Make ready 1/4 pint boiling water
  3. Prepare 1 tsp orange essence
  4. Prepare 1 large egg
  5. Make ready 2 oz Demerara Sugar plus a sprinkling
  6. Get 6 oz Self Raising Flour
Instructions to make Fruit Loaf:
  1. Put fruit(&peel) in large mixing bowl. Pour on boiling water and add orange essence. Mix through. Leave to soak minimum 30mins upto 2 hours.
  2. Preheat oven 160°fan. Line 2lb loaf tin. I use liners, saves time.
  3. Add sugar and beaten egg to fruit. Mix through. Add flour, mix through. Add to tin and level top. Sprinkle with Demerara sugar. Cook for 50mins. Test with skewer should come out clean.
  4. Leave in tin for about 10mins. I leave the liner on the loaf. When cool wrap in foil. Will keep for about a week. Good as it is or with butter.
