Simple Curd Rice can be prepared with steamed rice and plain curd or with additional tempering of urad dal, mustard seeds, chillies, coriander leaves and steamed rice.

Instructions to make Curd Rice:
  1. In a saucepan boil two cups of water, when the water comes to a boil put the rice grains into it and cooked covered on low flame till all the water is absorbed by the rice.
  2. Fluff the rice with a fork once it settles.
  3. Mash the rice a little with the help of a spatula.
  4. Put the chopped cucumber and salt into it and mix well.
  5. Heat the oil on medium flame. Add all the ingredients required for tempering. Once the mustard seeds start crackling remove from flame and add to the rice.
  6. Add the chopped green chilli, ginger, coriander and yoghurt to the rice and mix well.
  7. Enjoy with papad and a tad bit of mixed pickle!

Cool the rice then add curds and mix well. Pour the seasoning onto the rice and curd mixture.
