  1. Prepare 1-1 1/2 lbs. Corned beef
  2. Get 1 tbsp. Olive oil or another
  3. Prepare 1 1/2-2 cups milk
  4. Make ready 2 tbsp. Flour or corn starch
  5. Prepare 1/2 large onion
  6. Prepare 1/2 cup water
  7. Take 1 scallion(optional)
  8. Take 2 slices toast per person
  9. Prepare Salt-optional, not too much because meat is salty
  10. Get Pepper as desired
Steps to make Chipped Beef (SOS):
  1. Place a large skillet or pot over medium heat. While that heats thinly slice the onion. Add oil then onion to pan. Saute about 2 minutes.
  2. Chop corned beef to bite size. Add to pan and saute a few seconds. Level the mixture then add enough milk to be just under the meat, about 1/2 inch from top of skillet (not the pot though). Let it come to a boil.
  3. In a small bowl make slurry by adding flour and water. Whisk until smooth. Consistency should be thick but pourable. Add water if necessary. Put aside.
  4. Once it boils reduce heat to medium low and add flour slurry from step 3. Let it boil until liquid thickens to a thick gravy consistency. If not it will run through the bread.
  5. On a plate, place 2 pieces of toast. Top with chipped beef mixture and optional chopped scallion.
